Remember when I made the Chicken Rollatini with Spinach alla Parmigiana? Well the website also had a weight watchers homemade marinara recipe. Well that's what I would call it, they called it Filetto di Pomodoro. By the way the Skinny Taste website is great. I just got an email for a Crock Pot Creamy Tomato Soup. Looks yummy and can't wait to try it.
What you'll need is:
- 2 (28 oz) cans imported crushed tomatoes (Tuttoroso)
- 3 cloves garlic, smashed
- 1 tbsp olive oil
- 1/2 large onion finely chopped
- 1 cup carrots, finely chopped
- 1/2 cup fat free chicken stock
- fresh basil

I couldn't find the exact brand of crushed tomatoes they called for, but I had no problem finding imported crushed tomatoes. A healthier way? Probably to buy my own organic tomatoes or grow my own. Maybe one day I will have a garden. :)
First you saute garlic in oil, add your onions and carrots and saute on medium for about 2-3 minutes, until soft. I got my finely chopped onions and carrots but using this thing called the ninja. LOVE IT!!! If you have one, you'll know what I mean! :)
Add your tomatoes and chicken broth and simmmer for about 45 minutes.
We were painting during this time and it smelt SOOO good!
I did not add the basil in there yet, because we weren't eating it at that time.
But if you are eating this directly after cooking it, then add it in about 35 minutes into the simmering part.
After it cooled down I put it in 2 containers and put in the fridge. I wanted to can it, but not sure how it would do. Might have to ask around about that one.
Although we didn't get to try it that day, but we did with some spaghetti (turkey burger and wheat pasta) a few days later. YUMMM is all I can say!!!
Stayed tuned for when I tried to make BAKED Mozzarella sticks and use the marinara. Needless to say the baked part didn't go too well, but the marinara was still a success a week later!
